Novo Mesto: Castles and Honey Bees

A day of relaxation and culinary delights among the locals.

☕ Waking up by the Krka River.

We begin the day where the region’s heart beats—in the historic center of Novo Mesto. We’ll settle into a café right above the Krka River, which picturesquely embraces the town. Over a cup of aromatic coffee or tea, we’ll watch the river come to life and soak up the calm, welcoming atmosphere of the Dolenjska capital.

 The mysterious world of the Carniolan honeybee.

Our journey takes us to a local beekeeper, where we’ll step into the fascinating, fragrant world of the Slovenian honeybee. You’ll learn why the Carniolan bee is a source of national pride and discover its vital role in nature. Next comes a rich tasting session—we’ll sample various types of premium local honey, creamed honey, pollen, and other honey-based delicacies and liqueurs.

We continue to one of Slovenia’s most photogenic spots—Otočec Castle. We’ll stroll through the castle park, surrounded by centuries-old trees, while swans glide over the Krka River. Situated on a river island, the castle provides the perfect backdrop for that truly unforgettable photo—one you’ll love sharing with friends.

A Foraging Refresh: Wild food right at your fingertips.

It is time to reconnect with nature and discover the offerings of its seasonal pantry. Accompanied by an expert, we will head to meadows and forest edges to learn how to identify edible wild plants and herbs suited to the season. Using our fresh finds, we will prepare simple, fresh, and incredibly delicious wild snacks right outdoors.

 Create your own bottle of Dolenjska pride.

Dolenjska wouldn't be the same without its fine wines of protected origin. In the wine cellar, you won't just taste the wine; you will actively participate in creating your own souvenir. You will fill a bottle with premium local wine, cork it by hand, and apply a unique label to take home.

Cooking workshop and feast at a local homestead.

To perfectly round off the day, we will retreat to the warm atmosphere of a traditional Dolenjska homestead. Under the watchful eye of experienced local cooks, we will roll up our sleeves and work together to prepare a traditional local dish (such as *Dolenjska štruklji* or bread baked in a wood-fired oven) using seasonal, local ingredients. Once the kitchen fills with mouth-watering aromas, we will sit down at the table. Together, we will enjoy the delicious treats we gathered, cooked, and created throughout the day, socializing in an authentic, homely setting.
